Señora Diaz’s seniors cook it up in Chef Knittle’s kitchen

In October, Senora Diaz’s two senior IB classes took on a heated challenge in the Granby kitchens with Chef Knittle. To celebrate National Hispanic Heritage Month, the students chose two cultural dishes to make. 

Sopes are a traditional Mexican dish made of a fried masa base, with numerous toppings, like chicken, vegetables, sour cream, and salsas. Students flattened the dough, heated them to pinch into bowl shapes, and then deep-fried them. Students could then pick from the line of toppings to customize their own sopes.

For dessert, the students whipped up cream to frosted peaks for tres leches cake. Tres leches is a light and airy sponge cake soaked in three different milks; hence the name, three milks. The cake base was prepared by Chef Knittle for both the Spanish and culinary students to enjoy along with the sopes.
